Avocado brownies with carob flour

Ingredients

  • 250 g raw avocado, pared
  • 50 g extra virgin olive oil
  • 50 g carob flour
  • 50 g all-purpose flour
  • 100 g white granulated sugar
  • 3 eggs
  • 1 teaspoon baking powder

Optional for decoration: some strained greek yoghurt and peanut butter.

Quick, easy and delicious.

A dessert for any time without butter, without milk, gluten-free but with all great avocado and olive oil’s fat.

Carob flour is another ingredient which gives more nutrients.

It’s a special product full in proteins, calcium (twice as more as milk), phosphorus, potassium and magnesium. A good source of A, B, B2, B3, and D vitamins. Gluten-free (safe for celiac disease patients). It exceptionally replaces cocoa powder and does not contain oxalic acid (which prevents calcium and zinc absorption).

Carob is the natural fruit of carob tree (Ceratonia siliqua), a mediterranean long-lived tree.
Its several names comes from ancient greek word “keration”, a word for carob. From the word “keration” comes the word carat as the carob seed’s weight was the minimum measure for gold and precious stones.

So, you can easily use it as there are many greek-made carob flours in the market, in logical prices and gluten-free!

You can replace carob flour with cocoa powder of course.

Method

Preheat oven to 200C degrees.

Sieve the flour, carob flour and baking powder in a bowl.

In a mixer’s bowl, beat the avocado, olive oil, eggs and sugar using the whisk attachment.

Add the flour mixture and whisk.

Line a baking pan with parchment paper.

Pour the mixture and bake for 20 minutes at 200C.

Allow it to cool and cut.

For the decoration, you can put some yoghurt or peanut butter in a pastry bag and decorate each piece.
