Macarons with avocado-chocolate mousse or cream cheese

Ingredients

For macaron

  • 250 g almond flour (powder)
  • 18 g powdered sugar
  • 1 egg white
  • 250 g granulated sugar
  • 65 g water
  • 3 egg whites

For avocado-chocolate mousse filling

  • one ripe avocado (about 80g peeled)
  • few olive oil drops
  • 40 g cocoa powder
  • 30 g granulated sugar

For cream cheese filling

  • 200 g cream cheese
  • 100 g heavy cream (35% fat)
  • 60 g granulated sugar

Macarons with avocado-chocolate mousse or cream cheese!

And of course gluten-free!

Macarons are one of the most famous desserts that have almond flour as a basic ingredient.

Their filling can be whichever you like.

I present you here two of my favorites flavors!

Avocado and chocolate; avocado’s good fat combine with chocolate’s polyphenols.

While cream cheese moderates heavy cream’s fat and gives us more nutrients.

Choose your favorite filling and try your own macarons!!

Method

For the macarons

The given recipe starts with an Italian meringue

Whip 3 egg whites up into a meringue.
Boil the water and granulated sugar for few minutes in high heat until it thickens. Be careful as the quantity is small and the mixture can easily be caramelized.

The syrup must be so thick that sugar can stick between your fingers (see photos).

Gradually add the hot syrup in the meringue and stir continuously.

Stir until the mixture cools completely. Italian meringue is ready!

Continue for the macarons:
In a bowl, combine the almond flour, granulated sugar and egg white.

Combine the two mixtures stirring softly with a silicone spatula.

Now, you can add food coloring paste if you want to.

Split the mixture in two pieces if you want to add more food coloring pastes!!

Transfer the mixture into a pastry bag.

Line the baking sheet/s with parchment paper.

Pipe out the macarons in round shapes. You can firstly draw with a pencil the shapes to make it easier.

Set aside the macarons in room temperature (without covering them) for at least 45 minutes.

Preheat oven to 140C degrees.

Bake for 12-15 minutes, Fan.

Remove from oven and allow each baking sheet to cool completely. Then try to remove the macarons.

ATTENTION: They must cool completely before removing them from the baking sheet.

For the avocado-chocolate mousse filling
Peel and chop the avocado.
Mash the rest ingredients up in a food processor or hand mixer.

For the cream cheese filling
In a mixer’s bowl, add the heavy cream and sugar and beat with the whisk attachment until you create a thick whipped cream.
Add the cream cheese and stir until it’s incorporated.

To assemble the macarons, pipe one flavor on to each macaroon and cover with another piece to make a sandwich.
