Coconut tarts

Ingredients

For tart shell

  • 2 eggyolks (about 60 g)
  • 30 g all-purpose flour (gluten-free for celiac disease patients)
  • 150 g dried coconut, grounded
  • 50 g onstevia (half calories than common sugar)
  • 20 g couverture chocolate, chopped
  • Olive oil for cake pans

For filling

  • 200 g cream cheese
  • 50 g strained yoghurt 10% fat
  • 15 drops stevia
  • 1 vanillin or 1/2 teaspoon vanilla extract

For garnish : 150 g fresh fruit of season

Coconut tarts. An easy, practical and sugar-free dessert with the nutrients of coconut. Coconut has low glycemic rate so it slows down glucose release in our blood! A delicious and colourful dessert!

Make new, easy and different tart shells and fill them with cream cheese, yoghurt and fresh fruits.

Method

Preheat oven to 180C degrees Fan.

Grease a non-stick 12 cup muffin pan with some oil.

For the tart shells

In a bowl, stir the egg whites and flour. Fluff the mixture up.

You can skip flour quantity completely (if you want less calories). In that case you’ll make softer tarts!! In the procedure photos
below, i didn’t add flour. Try it!

Add the coconut and stevia and stir with your hand.

Combine, while stirring, the grounded chocolate (or chopped chocolate).

The egg whites’ moist should be soaked up so to be able to have an even dough.

Form the dough in 12 small balls.

Place one piece of dough into each cup.

Wet your hands and press down on them with your hands to fit it into each cup. Have a bowl of water next to you so to wet your hands
occasionally.

Bake for 13-15 minutes until golden.

BE CAREFUL as they are burned easily. Keep an eye of them.

Set aside, in room temperature, for few minutes. Remove them from muffin pan and allow to cool completely.

For the filling

Combine all the ingredients in a bowl. Stir with a hand mixer until the mixture is fluffy.

For less calories you can use strained low-fat yoghurt!!

Put the mixture in a pastry bag for your convenience.

Fill the tart shells and decorate with fresh fruit.
