Almond cake with honey and cocoa powder


  • 120 gr. almond flour
  • 120 gr. honey
  • 100 gr. plain flour (gluten free if you are a celiac)
  • 1 tbsp baking powder
  • 4 eggs
  • 150 gr. olive oil
  • 30 gr. cocoa powder
  • 30 ml brandy or cherry liqueur

For the syrup

  • 150 gr. water
  • 50 gr. honey


Lay a non stick paper in a baking pan (20-22 cm diameter).

Preheat the oven to 160C degrees.

In a big bowl whisk for 1-2 minutes the eggs with the honey.
Add in the mixture and combine the olive oil.

You can use another vegetable oil if you don’t have/wish olive oil.

Continue to stir and add the rest ingredients (brandy, almond flour, plain flour, baking powder).

Bake for 30 minutes to 160 C degrees Fan.

Leave the cake to cool completely.

For the syrup
In a small saucepan bring the water to boil.

Stir in the honey and bring to a boil for 1 -2 minutes (low heat).

Remove the syrup.

The cake mixture should be completely cold/cool and the syrup hot.
