Carrot Cake with Orange
- 1 orange (approx.220gr)
- 3 carrots, shredded (approx.220gr)
- 500 gr. pastry flour
- 1 teaspoon baking powder
- 200 gr. sugar with stevia (contains half calories of regular sugar)
- 100 gr. greek strained yogurt 10% fat
- 5 eggs
- 200 gr. olive oil
- 1 teaspoon cinammon
- 1/3 teaspoon clove
- some salt
- 200 gr. dairy cream whipped with 50gr. powdered stevia sugar
- 250 gr. cream cheese
In this recipe we will use a non-shredded organic orange. We will consume it with its peel, so
we are going to choose an excellent quality orange.
Cut the orange in little pieces and mash it up in a blender.
Finely shred the carrots.
Combine the flour with baking powder.
In a mixer bowl combine the sugar and eggs, in low speed.
Add the olive oil and yogurt.
Add the orange, carrots, salt and spices.
Lastly, add gradually the flour.
Our mixture should be moist enough.
Pour the mixture in a large cake pan and bake at 170C degrees Fan for 1 hour and 20 minutes. (if we want to bake the whole mixture)
Otherwise we can split the cake mixture and bake one cake and 12 cupcakes.
In this case bake the cupcakes at 170C degrees Fan for 25 minutes and the cake for 1 hour.
Allow to cool completely before frosting.
For the frosting
Whip the dairy cream and powdered sugar into a stiff heavy cream.
Add the cream cheese.
Pour the frosting in a pastry bag.
Decorate your cake!
