Greek Happy New Year Cake, gluten-free
- 8 eggs
- 110 g fresh cow butter
- 140 g extra virgin olive oil
- 2 teaspoons baking powder
- 500 g milk
- 350 g sugar
- 50 g almonds, coarsely chopped (roasted with their peel)
- 800 g all-purpose flour (gluten-free)
- some lemon or orange zest
- 1 teaspoon vanilla extract
- 200 ml heavy cream
- 350 white chocolate
- 50 g couverture chocolate (for cake’s decoration)

New Year is coming always accompanied with a Greek Happy New Year cake.
An easy recipe for this gluten-free cake is one of the most common greek new year cakes.
Homemade and creative preparation for every home in Greece, since we’ll try to make it all by ourselves with ingredients of our choice.

The ingredients given, are for a large new year cake. For a 38cm diameter baking pan.
For a smaller cake you’ll need smaller ingredients’ quantity.
Separate the eggyolks from the egg whites.
Whip the egg whites up into a stiff meringue.
Beat the butter until it becomes white (about 10 minutes).
Add the olive oil, eggyolks with sugar and stir for 10 minutes.
Add the milk.
Combine the baking powder and flour.
To the mixture add gradually the flour, vanilla and lemon zest.
Stir softly the meringue and almonds.
Grease a baking pan with butter or line it with parchment paper and pour the mixture.
Do not forget to add the lucky coin!!!!
Bake in preheat oven in 170C degrees for 1 hour.
After the cake is cooled:
Cut the chocolate in small pieces.
Warm the heavy cream.
In a bowl, add the chocolate and heavy cream and stir.
Sprinkle the cake and allow it to cool. You can refrigerate it.
If you want more thick chocolate add less heavy cream or no cream at all!
With couverture chocolate you can decorate your cake after you’ve melt it in bain marie or microwave.
