Tuna burgers with red hummus
- 100g wholewheat breadcrumbs
- 20g ground linseed
- 2 whisked eggs
- 120g water canned tuna – finely drained
- 1 teaspoon Dijon mustard
- 3 tablespoons parsley, finely chopped
- 1 teaspoon garlic powder or one clove of garlic, pulped
- salt, pepper
- olive oil
In a bowl, mix the breadcrumbs, linseed, eggs, mustard, tuna, parsley, garlic and season with salt and pepper.
Knead eight burgers.
In a hot non-stick frying pan add some olive oil and roast the burgers until brown on each side.
Serve with arugula and one spoon of red hummus.

Alternatively (for those who like oat) we can replace breadcrumbs with grounded oat.
