Gluten-free ciabatta bread rolls

Ingredients

  • 150 g corn flour
  • 500 g flour (gluten-free, bread flour)
  • 400 g milk
  • 50 g extra virgin olive oil
  • 10 g dry yeast
  • 100 g water
  • salt

Extra: some flour to knead the bread rolls (about 1/2 cup)

Gluten-free ciabatta bread rolls of course!

A crunchy bread roll recipe which you can enjoy even the next day.

They need time but the result will reward you.

Ideal for sandwiches and quick meals for children.

Method

Milk has to be cold or warm (so corn flour won’t become lumpy)

In a bowl, add corn flour, milk and stir until corn flour dissolves completely.

Add the flour and salt.
Mix in a mixer using the dough attachment (hook attachment).

When mixture is blended, set aside to rest.

Warm the water and add the sugar and yeast.
Let the yeast expand for 15 minutes.
Transfer the mixture to the bowl with flour and mix using the mixer.

The dough will be soft enough. We won’t be able to knead it.

Cover the dough and refrigerate it for at least 5 hours. This is a part which you unfortunately can not skip. You can extend it though.
You can leave the dough even for a day. The ideal is achieved with a 12 hour rest in fridge.

Remove the dough from the fridge and with wet hands and a wet spatula unstick the dough from the bowl.

Add the rest flour and knead until the dough is soft.
Beware! No much kneading is necessary.

Cut the dough in two large pieces and each piece to two smaller etc.

Total 8 dough pieces.

Knead in the shape you prefer and transfer in a baking pan that is dusted with some flour or lined with parchment paper.

Butter every bread roll with olive oil and cover with plactic wrap.

Set aside the dough to rise for at least 2 hours.

You can use a cotton towel on top as well.

Remove the plastic wrap and bake in preheated oven at 200C degrees for 20 minutes until they are golden.

Your ciabatta are ready for delicious sandwiches or burgers!!
