An after Christmas chicken salad


  • 1/2 iceberg cabbage
  • 2-3 carrots (about 130 g)
  • 50 g avocado
  • 50 g boiled beetroot
  • 2 eggs, boiled (stiff)
  • 40 g extra virgin olive oil
  • juice of half lemon
  • salt and pepper

For chicken

  • chicken breast (about 250 g)
  • 1/2 glass wine
  • mustard (about 1 teaspoon)
  • salt and pepper

After Christmas, chicken salad, with vegetables and avocado is my suggestion for a more relaxing meal.

After such rich festive meals, a salad rich in vegetables and lean chicken will bring us back to balance as you can enjoy it as a main meal.

Whether you prefer this salad – either as an side dish or as a complete meal – is definitely quick, easy and absolutely enjoyable!

My children, however, disappeared it in no time !! I have just taken two pictures !!



First of all we boil the eggs.

Rinse the cabbage and peel the carrots.

But first, let’s deal with the chicken, which will take most of the time.

Cut the chicken breast lengthwise into strips.

In a non-stick frying pan, we start sauteing the chicken (without adding any substance). Do not rush to turn the fillets on the other side.

If the pan is really non-stick, you will not need oil. If you do not have a non-stick, you can add a little olive oil.

Be sure to get color on both sides.

Add with wine and season with salt & pepper. Let the alcohol evaporates and add the mustard.

Stir and the chicken is ready in few minutes!

Now we’re assembling our salad:

On the fine part of a grater, grate the carrots. Put them in a bowl or a platter at which we assembling our salad.

Coarsely chop the cabbage.

Cut the avocado and the beetroot in cubes.

Add them to the platter, add salt and lemon and stir the vegetables with your hands.

Cut in four the eggs and place them over the vegetables.

Place the chicken and sprinkle the salad with olive oil.

Grate some fresh pepper and we are ready.

Alternatively instead of iceberg cabbage I prefer this salad with arugula! It’s just as fantastic.
