Couscous salad, gluten-free

Ingredients

  • 200 g corn couscous (gluten-free)
  • 4-5 sun-dried tomatoes
  • 1 tomato (200 g)
  • 1 cucumber
  • 1 green pepper
  • 1 dry onion
  • salt and pepper
  • juice of one lemon
  • extra virgin olive oil

Couscous salad, gluten-free!

Couscous, in this recipe, comes from coarsely chopped corn so this is how it’s gluten-free.

Of course, it can be made with any couscous you prefer (with gluten).

Quick, easy and for any time a balanced and refreshing meal.

Try to serve it in a daily or festive meal.
It’s just as enjoyable!

Method

Boil 300ml water and remove from heat.

Add the couscous, stir and set aside, covered so to soak up the water (about 15 minutes).

In a bowl, chop the vegetables and sun-dried tomatoes.

Add the couscous and mix.

Season with salt and pepper and squeeze one lemon.

Add extra virgin olive oil (here, i calculated about 3 tablespoons), mix and serve.

I recommend it as a side dish with fried calamari. A perfect combination!
