Ingredients

  • 250 g heavy cream (35% fat)
  • 10 g fresh cow butter

ATTENTION to temperatures because they are quite high and rapid burns can occur quickly.

I remind you that it needs special attention and away from children.
The temperatures being developed are particularly high.

Method

If you are cooking with gas, pay even more attention.
The gas is of course easier because the temperature rises quickly and is more dangerous.

In simple burner we will need a little more time but with a little practice we manage it.
Here I describe the process to a burner.

In a simple pan, pour the sugar and bring it to the highest temperature.
We do not move or mix at first.

As soon as it begins to melt, add a little water around the pan to melt the sugar more easily at the edges.
In a very short time it will take the golden color of the caramel.

Remove from heat and pour the heavy cream, stirring quickly and continuously.

Once the cream is incorporated into the caramel, put the caramel in medium heat for a few minutes to get a boil.
(If we see that it has thickened enough maybe it does not need the additional boiling).

Pour and incorporate by mixing the butter.

We are ready.

Allow to cool (CAUTION is high enough) and if we do not use it immediately put it in a jar and then in the refrigerator (to preserve it).

With the quantities I present here, I have about 430 grams as a final product.

It is a cream with high calorie, carbohydrate and fat content. So you need to measure and pay attention to the quantities.
Besides, a small spoon contains the concentrated taste of the caramel and is extremely aromatic and rich in flavor.

In the refrigerator it can be kept for many days and can be used in several recipes or even as frosting to a cake, rice padding or
anywhere you can imagine!
