Shrimp Pasta

One of my favorites meal!
The proportion given is for 6 portions.

Ingredients

  • 1 kilo shrimps (fresh preferably)
  • 200 ml tomato sauce
  • 1 tablespoon tomato paste
  • 1 fresh tomato
  • some paprika
  • one dry onion
  • 2 cloves of garlic
  • olive oil, about 5 tablespoons
  • some parsley or fennel
  • 1 spaghetti package (500 g)

Method

In this dish all the fuss is about gutting the shrimps.
I don’t remove the head, only the shell and vein.

Peel and mash the tomato in the food processor.
Chop finely the onion and garlic and saute them in a saucepan with some olive oil.
Add the fresh tomato, tomato sauce and tomato paste.

Season with salt and pepper, add the paprika and boil for 5 minutes.
Add the shrimps and boil for 5 minutes in low heat.

In a pot, boil the water for the spaghetti.
Boil them separate from tomato sauce as the sauce boils faster.
Boil the spaghetti less time so to become al dente.

Drain the spaghetti and add them back to the pot along with shrimp sauce.

Add the rest olive oil, chopped parsley or fennel.

Stir and your pasta is ready. Delicious, healthy and quick.
