Corn fritters

Ingredients

  • 350 g corn (frozen or canned)
  • 1 big dry onion
  • one clove of garlic
  • 1 teaspoon powdered curry or turmeric
  • 2 fresh green onions
  • 3 tablespoons flour
  • 1/2 teaspoon baking powder
  • one big egg or two smaller
  • salt and pepper
  • oil for frying

A quick fritter alternative that accompanies whether meat or fish dishes.
Quick, easy and tasteful.

Method

If you use frozen corn, boil it for about 5 minutes and then drain it completely.

If you use canned corn, just open and drain.

Finely chop the fresh onions, dry onion and garlic.
Alternatively, i can pulse the dry onion and garlic in a food processor.

Mix all the ingredients in a bowl.
Heat the oil in a frying pan. Small quantity.

With a spoon, add the mixture to the frying pan by small quantities.

Carefully so the mixture pieces do not touch each other.

Turn them over carefully one at a time, not too soon as they will crack.
Fry until golden.

Place them in a plate covered with kitchen towel so to soak up the oil. Serve.

The mixture can be refrigerated, while covered, up to two days and fry it whenever you want.
