Zucchini and chocolate cookies
Ingredients
- 100 gr. almond flour
- 100 gr. all purpose flour (g.f.)
- 70 gr. coconut sugar
- 200 gr. buckwheat flakes (alternatively g.f. oats flakes)
- 30 gr. g.f. corn flakes
- 180 gr. shredded zucchini (squeeze them to discard any excess water)
- 70 gr. black chocolate (in small pieces or chocolate drops)
- 1/4 teaspoon salt
- 1 egg
Method
Mix all the ingredients in a bowl, until your form the dough as a ball.
Use some vegetable oil in your hands, or use cooking gloves, divide the ball into small balls.
16 little balls, in total.
Press each one down just a little, as to shape a cookie !
Use a parchment paper in a baking tray, and place your cookies on it.
Bake for 12-14 minutes at 180C degrees Fan, until golden.
Let them cool completely until you try them!
