Stuffed pork loin

I should named it “kids pork loin” as it’s so easy and quick that even children could cook it themselves!
You can try it and so they’ll be able to have fun and enjoy it.

Ingredients

  • 1 pork loin (about 600 g)
  • 1 dry onion
  • 1 or 2 cloves of garlic
  • 1 tomato
  • some feta cheese (60-80 g)
  • salt
  • pepper
  • some toothpicks or kitchen twine

Method

Ask the butcher to cut in half and bruise the pork loin so to be ready for the stuffing.
Otherwise you can do it yourself, with a sharp knife and a pestle.

Finely chop the onion and garlic.

Peel and chop the tomato.

Place the pork loin in a flat surface and season with salt and pepper.
Spread the chopped onion, garlic and tomato.

Shred the feta cheese on top.
Roll the meat into a log and close it with toopicks.

Transfer the pork loin to a very hot pan. Sear on all sides until golden.

Do not worry if the pan is smaller than the pork loin. Once seared it will be smaller.

Transfer to a roasting pan and bake at 180C degrees for 10 minutes.

Set aside to cool before you cut and serve.
