Stuffed mushrooms

Ingredients

  • 1/2 kilo mushrooms, medium size or larger
  • 2 fresh onions
  • 1 small zucchini
  • 1 small dry onion
  • some fennel
  • salt
  • pepper
  • 100 g gouda cheese or parmesan

Method

Finely chop the onions, dry onion and fennel.
Grate the zucchini and strain it to get its moisture out.
Peel the mushrooms and cut their stems.

In a non-stick baking pan add some oil and bake the mushrooms in medium heat so most of their moisture get out.

Basically i prepare and pre-bake them.

In a frying pan with a small amount of oil add the remaining ingredients and finely chop few mushroom stems.
Sauteing them until they wither.

Remove from heat and season with salt and pepper.

Remove the mushrooms from oven, which must now have lost some of their liquids.
Add in each mushroom some of the mixture.

Sprinkle each mushroom with some grated cheese and bake in medium heat until the cheese is golden.
