Spinach Burger

I really like spinach and i use it in many of my recipes.
This is another easy way to combine the salutary spinach with delicious meat mince.
It is easily cooked and we can have our mixture ready from the day before, if we like.

Ingredients

  • 750 g meat mince (ideally 500 g beef mince and 250 g pork mince or lamp mince)
  • 2 eggs
  • 4 slices of bread (or 2 bread rolls)
  • 1 big dry onion and one clove or garlic (chopped or pulsed)
  • some oregano
  • 350 g spinach, pared (or frozen)
  • 50 g olive oil
  • 1 tablespoon mustard
  • salt
  • pepper

Method

Preheat oven to 200C degrees, oil or line a baking pan with some parchment paper.

Finely chop the spinach.

If it’s frozen you don’t need to chop it, just add it as it is. Usually it’s already chopped.

Wither the spinach in a baking pan with a small amount of olive oil and salt, in medium heat for 10 minutes. If it’s frozen more time is needed.

Soak the slices of bread with water, drain them and place them in a bowl by grounding them in small pieces.

Add the meat mince, onion, garlic, eggs, mustard, olive oil, oregano and spinach.

Season with salt and pepper and mix.

Shape into patties and place them in baking pan.

Bake for 20 minutes.

As an alternative, you can cover the mixture and ice it for 1 hour (or overnight) to thickens.
