Quick vegetable garnish
- 2-3 medium carrots
- 2-3 zucchini
- 1 small potato
- 1 egg
- salt and pepper
It is one of the quicker snacks/side dishes you can ever make.
If I want to skip the egg I can put some flour (30g-40g)
Grate the zucchini on the coarse side of a grater.
Put them in a strainer, season with salt and leave them for a few minutes.
Squeeze them to get out their juice.
In the coarse side of the grater again, grate the remaining vegetables (carrots and potatoes).
Put them in a bowl and add the egg.
Season with salt and pepper.
In a frying pan with hot oil, fry a tablespoon of the mixture.
Do not hurry to turn them over otherwise they will crack.
Fry on both sides and leave them on kitchen towel to cool.
Ready in few minutes!
