Quick and easy mayonnaise

Ingredients

  • 200 g extra virgin olive oil
  • 2 egg yolks (fresh and free-range preferably)
  • 1 teaspoon powdered mustard
  • 1 level teaspoon salt
  • juice of one lemon
  • some white vinegar or balsamic paste with lemon

Who is “afraid” of mayonnaise? Don’t worry, it won’t split.

Homemade mayonnaire is so easy that when you try it you will not want the packaged again.

In a few seconds you have homemade, handmade mayonnaise with minimal effort.

Try and you will see that you should not be afraid of it for so long after all.

Of course, you will need a blender (for this particular hand blnder), extra virgin olive oil and fresh eggs.

Method

Lemon juice may not be needed all. You may not like the acidulous taste, so it’s better to start dividing your lemon juice into two parts.

In a deep bowl place all the ingredients. The ideal is a narrow and deep jug or mixer bowl. Beat with a hand blender for a few seconds. Count up to 5 at most.

After the first beat, beat again with the blender trying to pick it up higher so the mayonnaise rises.

It takes no more than a 15-20 seconds total beat.

Pour the mixture into a bowl.

Taste and correct either with some lemon or vinegar for flavor and oil, if needed, until it has a really velvet texture.

Your homemade mayonnaise is ready.
