Plastos or vegetable pie with cornflour topping

Ingredients

For topping

  • 250 g corn flour
  • 60 g extra virgin olive oil
  • 40 g butter fresh cow or goat + 10g extra to spread over the topping at the end
  • water (as needed to make the mixture creamy)

For filling-base

  • 50 g corn flour
  • 550 g various herbs (spinach, leek, chards, fresh onions) (pared and drained)
  • 60 g dry onion finely chopped
  • 1 clove of garlic (mashed)
  • 50 g olive oil
  • 30 g fresh butter
  • salt & pepper

In addition, for the pan: some olive oil and 30 g cornflour

TIP: If you want to make 100% lenten, replace the butter quantities with olive oil

Plastos is the pie of poverty, as it contains humble greens (preferably wild and tame) and the flour of the pour, cornflour or otherwise
“corn-meal”.

It is a easy recipe without any difficulty, as you do not have to find or make a phyllo (Greek pastry sheet).

The crust created on its surface is particularly crispy and delicious.

In today’s nutrition, greens are treasure of course! Especially the wild ones of the field.

Try to make it (though you do not have wild greens!) as it is quick, very nutritious and very easy.

You can easily skip the butter (to reduce calories and to make it fasty!) and you can also easily add feta cheese (to make it even more
delicious).

In case you add feta remove the mashed garlic. Both are not needed.

Method

We pare, rinse and chop the various greens.

Preheat oven to 190C degrees.

Finely chop the dry onion and mix it with the greens.

Saute the greens in a saucepan – preferably non-stick – with salt and pepper until they wither.

Once withered, add the mashed garlic, butter, rest olive oil and flour and mix.

Grease a pan and dust it with flour.

Spread the greens.

For the topping, combine all the ingredients together and spread them to the surface of the pie (with the help of a spoon – it is very easy).

Bake for 45 minutes at 190C degrees and for 5 minutes Fan to turn golden.
