Kokoretsi

Ingredients

  • 1 goat pluck (about 1kilo)
  • 1 goat intestine (rinsed and washed thoroughly)
  • salt, pepper, paprika (sweet), some oregano
  • small skewers

Greek traditional and festive kokoretsi attends many greek feasts.

Enthusiasts appreciate and honor it as they know the effort and preparation this special greek viand has.

Here i make it in a smaller portions that easily can be prepared and cooked in any house.

It definitely has enough work and preparation but the result is a tasteful delight which still exists in our country to attend festive meals in every home.

Method

Cut the pluck into pieces (use all intestines).

Cut all parts in pieces 5-6cm diameter (lungs, heart, liver and spleen, in two or three pieces).

Transfer to a bowl and add the pepper, oregano, paprika and mix.

Thread the pieces of goat pluck on the skewers in the alternating in the following order :
lung, liver, heart and continue until cover the whole skewer.

Wrap the intestines around the meat to cover at the edge of the skewer.
Try not to tighten too much so not to break the intestine. Have an assistant if you can. It will definitely be quicker and easier.

Bake at 200C degrees for 30 minutes, on grill while we’ve placed a baking pan with water below. It will drain a lot of fat
and the water is needed for your oven protection.

Cut in round slices and serve whether hot or cold.

I personally let it cool so to cut it more easily.

I prefer it cold too.
