Gluten-free red pumpkin cake

Ingredients

  • 4 eggs
  • 500 g red pumpkin, shredded
  • 200 g brown sugar
  • 350 g all-purpose flour (gluten-free)
  • 1 teaspoon baking powder
  • 200 g extra virgin olive oil
  • 100 g grounded walnuts or almonds with their peel
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon grounded clove

Gluten-free red pumpkin cake without milk or butter.
With extra virgin olive oil!

Autumn and winter dessert that accompanies every hour!

Aromatic, extremely fluffy and tasteful this cake will excite you and you’re going to forget the the fatigue of cleaning and slicing the red pumpkin.

Personally, the first time I made it with grated nuts reminded me very much of the taste of the walnut pie.

Method

Finely chop the red pumpkin.

If you cannot make it using a greater you can beat in small quantities in a food processor.

Combine first the solid ingredients. The flour, baking powder, almonds or walnuts and spices.

I’ve made this cake in two ways. Both of them have the same result. Choose which suits you most.

First way
In the first way i don’t use a mixer but only a mixing spoon or a stirrer instead. Mix all the ingredients together.
When the mixture is blended (in a few minutes) spread it in a cake pan.

Second way
The second way is more time consuming and definitely needs a mixer.

Beat the sugar and olive oil until sugar dissolves. Don’t worry if it doesn’t though. Usually when we use brown sugar it melts completely during baking.

So stir for few minutes.

Add the eggs one by one.

Add the grated pumpkin and solid ingredients lastly.

The mixture will be quite thin. It will be baked just fine.

Spread the mixture in a cake pan (or smaller tins for single cakes)

Bake for 30 minutes at 170C degrees and for another 30 minutes in Fan.
I don’t prefer to bake in Fan from the start since it will dry the cake.

If you have used smaller tins, bake 30 minutes at 170C degrees Fan.

Allow the cake to cool and serve with whichever toping you like and some extra cinnamon.

Here, i present you a variation that the cake has chocolate cream filling and frosting.
