Gluten-Free Crepes

Ingredients

  • 400 g bread flour (gluten-free)
  • half teaspoon salt
  • 50 g olive oil
  • 4 eggs
  • 700 g cold milk

optional: some grounded cinnamon or one tablespoon carob flour

Gluten-free crepes recipe!!!

Quick and easy crepes to fill in with any filling you desire.

Sweet or savory.

Alternatively you can add one tablespoon carob flour. It gives a different colour in your crepes. Carob flour is a chocolate or cocoa alternative. With just one tablespoon you can enjoy dark delicious crepes (without adding chocolate or cocoa).

Gluten-free flour dissolves better in cold water or milk as it is starchy.

To tell the truth, I didn’t face difficulty in crepes’ making but some changes were needed beside those that are made with common
wheat flour (with gluten).

Choose a non-stick pan and preheated. Not hot but warm enough. If you have gas in your kitchen be careful as they don’t need high
temperature during the whole process. As soon as you make the first crepe you need to low the temperature.

Method

In a bowl, add the flour and sugar.

Add the cold milk and whisk.

The flour dissolves better with the cold milk.

If it doesn’t you can strain the mixture (a little difficult as the mixture is sticky) or, as an easy way, pulse it with a food processor
for few seconds. Your mixture will become velvet!

Add the eggs on at a time and stir. Add the olive oil (and spices if you want i.e.cinnamon or carob flour)

In preheated pan add some drops of the oil and add a small amount of the mixture using a ladle.

Start to move the pan in circular motions so that the mixture covers the surface of the pan.

As soon as one side turns golden on the bottom, flip over with a wooden spatula and cook the other side.

Usually the first crepe doesn’t seem so good as the pan wasn’t preheated well. The rest will be fine.

The mixture given is about for 15 crepes.

Enjoy them with sweet or savory filling!!

Note for diabetics: Do not forget to estimate the extra carbs if you make a filling.

Caution: Vangelis has calculate the carbs of a crepe without filling!!
