Eggplant pie

Ingredients

For the mince

  • 400 g minced beef
  • 200 g tomato sauce
  • 1 tablespoon tomato paste
  • 1 dry onion
  • 2-3 cloves of garlic

For the pie’s phyllo (pastry sheet)

  • 500 g flour (pastry, gluten-free)
  • 1 egg
  • 50 g oil
  • 1 tablespoon vinegar
  • some salt
  • some more flour for phyllo rolling

Extra ingredients

  • 500 g eggplants, chopped into small cubes
  • 100 g oil for frying
  • 200 g gouda cheese
  • salt and pepper

Eggplants are so nutritious and easy to cook that we all should experiment with.

Such an experiment is this pie which originated from other food leftovers and my children loved it!

There is no second day for this pie! Surely we are many!

You should definitely try it yourself!!!

Method

The most time-consuming part of this recipe is phyllo preparation.
We start from there, preparing the dough.

In a bowl, add the flour, egg, vinegar and salt.
Add the water and knead until the dough softens and does not stick in our hands.
If you use mixer be careful the dough to has this texture.
Cover the bowl with a towel and set aside.

If you have some mince from another recipe (leftover), you can use it.
Otherwise, we start our mince preparation.
Finely chop the onion and garlic.
In a saucepan, saute (with some oil) the onion and garlic and add the mince.
Sprinkle with some salt to help mince sauted faster.
Add the tomato sauce, tomato paste and some water.
Season with salt and pepper.
Simmer for 6 minutes.

In a pan, add the oil, chopped eggplants and saute in medium heat.
Season with salt and pepper in medium to low heat for 10 minutes.
When they soften remove from the heat and allow them to cool for a while.

Start rolling out the phyllo.

Roll out at least 3 phyllo and spread two of them in an greased baking pan.
Combine all the ingredients (mince, eggplants, cheese) in a saucepan.
Stir and spread the mixture in the phyllo.
Cover with the last phyllo and close roundly the pie.

You can use extra phyllo but make sure to oil their surface before adding the next.
In this recipe, i recommend you two, not more.

Use a knife to make small holes in the surface and drizzle with some water and oil.

Bake at 190C degrees until golden.

Set it aside to cool. Try it!!!
