Easy and aromatic pumpkin soup

Ingredients

  • 500 g sweet pumpkin
  • 1 potato
  • 2 carrots
  • 50 g melted butter or extra virgin olive oil (i personally prefer butter in this recipe)
  • fresh thyme
  • salt & pepper

Quick, easy and delicious. Easy and aromatic pumpkin soup!

After all I can not part from pumpkins. A warm and aromatic soup is what we need for these cold winter days and nights.

Try it as it’s easy and nutritious!

You can replace the fresh thyme with dried one or even with refreshing spearmint.

For extra flavor you can even add vegetable broth instead of water.

Method

Cut the pumpkin, potato and carrots in pieces.

In a pot, add some oil or butter and saute the vegetables.

As long as the heat is high, add a glass of water (or vegetable broth), low the heat below medium and simmer for about 30 minutes.

When the vegetables are soften, add some fresh thyme and season with salt and pepper.

Mash them with a hand blender.

They must have smooth and creamy texture. Velvet soup!

If the mixture is too thick, thin it with some warm water.

If the mixture is too thin leave it until it boils once with the lid open so the liquids to evaporate.
As you prefer!

Add the butter (or olive oil) and taste it whether more salt and pepper are needed.

Serve hot or warm along with toast with melted garlic on top (preferably).
