Aromatic pumpkin pilaf

Ingredients

  • 800 g white/yellow pumpkin pared
  • 130 g onions
  • 1 clove of garlic
  • 70 g cow butter
  • 1 lt vegetable broth (or a little more)
  • 1 glass white wine (about 250g)
  • 300 g pilaf rice
  • 100g gruyere cheese
  • salt & pepper

We usually meet pumpkin in soup recipes but in pilaf too?
We can definately enjoy it in a granular pilaf!

I present you here a special aromatic pilaf that brings out the vegetable broth’s flavor which you’ll add. If your have spare time (and mood of course) you can make your own vegetable broth. You will taste the incomparable difference.

Make sure to flavour the broth with rosemary and thyme so to have all the autumn scents in your meal. The combination of those two scents is what makes your pilaf special and delicious.

The pumpkin is tasty and nutritious especially for children, a dish full of energy and health!

Method

Cut the pumpkin and remove the seeds. Peel with a knife so to have its pure white-yellow flesh.

Cut the pumpkin in three parts. Chop the one part in cubes and set it aside.

Cut the rest two parts in big unsymmetrical pieces as they will mashed up finally.

In a shallow pot melt half of the butter and about 50g onions. Saute the onions for a while and add the big pumpkin’s pieces.
Saute for a few minutes and add about half vegetable broth.

Cover the pot and let it boil about 15 minutes.

Pulse the mixture with a food processor or a hand blender inside my pot.

If you want to make extra velvet pilaf sieve the mashed mixture. I didn’t do it and used the mixture as it was.

Melt the rest of the butter in a saucepan and saute until the rest of the onion turns golden. Add the mashed garlic, rice and stir.

Add the wine and a wineglass extra vegetable broth.

Low enough the heat and add the pumpkin puree in the rice.

Stir and let it boil until the rice softens, about 20 minutes. Check occasionally if more broth is needed. If there is no broth left add some hot water.

Add the cube chopped pumpkin in the mixture and stir.

Let it soften and be incorporated for about 10 minutes.

Add the shredded gruyere cheese, season with salt and pepper and stir for one last time.

Enjoy the pumpkin and vegetables’ nutrients in this special pilaf!
